Zapotec Pleated Tomato, Solanum lycopersicum

HEIRLOOM. Also known as Oaxacan Ribbed, Zapotec Pleated is a gorgeous, tomato that borders on weird. It’s so heavily ribbed it’ll make everyone scratch their head, but the taste is wonderful. Well balanced acid and sweetness, with very few seeds. A good slicer, but hollow cavities form as the tomatoes get bigger which also make them good for stuffing.
